Happy Monday Friends…….
Here it is Saturday already, can you believe it? We’ve had so much rain lately – which is good. But a cold rainy day definitely calls for a bowl of soup. Don’t you agree?
One of my favorite phrases is Soup is Good Food! Soup is a staple in our home. Most times soup is a quick easy meal. It can be fancy, it can be quick but most of all… it is delicious!
Another reason I like soup is because I use up all the leftovers in the refrigerator. A carrot, some celery, a zucchini or two, spinach, onion – you get the idea right? That and a can of tomatoes and we have the makings for a simple easy meal!
Minestrone Soup doesn’t take any time at all. If you make a double batch you will have plenty to freeze on those nights when you just don’t want to cook also. Another bonus is your entire house will smell amazing!
And on day two? It will taste even better!
Adding in some kidney beans (take a shortcut and use canned beans), pasta or rice will make your soup heartier and more filling. This recipe for Minestrone only has about 200 calories per generous two cup serving!
There’s something about a warm bowl of soup that is a perfect meal when it’s rainy or chilly outside.
This soup is vegan but shhhh! Don’t tell I promise you no one will miss the meat!

My life coach urged me to be a philanthropist, when you give more you expect more, and have more to give.
Sounds good in theory, but how do I apply that to my actual life?
How do I give more, when I need so much for my family and there are only 24 hours in a day?
Similar to what my life coach suggested it starts with expecting more. Which in my work means working with those that I really like with similar values, and not settling for meaningless and frustrating work.
While expecting more, I am more likely to attract those who value philanthropy and believe in giving back.
Last year I started giving back with each transaction to Sweetdreams.org
I have helped with several fundraisers and helped with rooms and sponsored events but giving back per transaction really helped me to see a bigger goal for the organization as a whole, and see what difference we can make with ten more of me, as corporate sponsors.
One of my 2016 goals was to get a few rentals with my husband and travel more with the kids and alone as a couple.
On our alone vacation to FL, we were cruising through St Augustine when I saw it.
A whole store dedicated to giving back!
What a brilliant idea!
So I came back from FL ready to do a little more with my PHILANTHROPY.
First off I doubled my “give back” and donation with each transaction to sweet transaction. I joined the board so I could really dive in to how I could help scale with this non profit, and I’m now assisting with outreach for sweet dreams.org.
Of course each outreach I have had an amazing experience and met people I would never meet in my regular life.
But, could I do more?
Sure….. can’t we all?
Is it that burning desire to do more, help more, raise more, that keeps us going for more?
Challenging ourselves to make sure we are doing something fulfilling?
With the burning desire to create something more I came up with this idea, based on PHILANTHROPY store.
Each Friday we will host a vender such as PINK TOP TRAILER
Traveling boutique, to set up in our INSPIRED LIVING office.
We will host a sale and advertise for each vendor for FREE!
10% will go back to sweet dreams.
Of course the goal is to raise awareness and funds, but how many amazing experiences will I have? How many amazing people will I meet? Am I destine for a new wardrobe?

Happy New Year! What inspires you?
This time of year everyone’s looking for that inspiration.
What inspires you? What keeps you motivated, to stick with your new years resolutions?
Most of my friends and clients know I am a long-time runner who enjoys distance. But it’s very hard to gain any muscle while running distance. (Side-note, as you reach your 40s muscle becomes a little more important than it used to be)
One of my bucket list items has been a bikini competition. I have a few girlfriends now interested in doing the same.
So here comes the hard part, DOING IT!!
I can talk about it, read about it, interview trainers, review training schedules, but actually doing it?
One of my first steps was to reach out to a friend who has done a bikini competition, and join her accountability group.
Here’s where it gets real! I’m supposed to have a before picture in a bikini online? I don’t know, I don’t know if I can do that!
I mean I’m a professional and everything I don’t know if I should have a bikini photo photo out there on the Internet maybe I should just cancel this whole thing?
A bikini picture when you’re super in shape and tan that’s one thing. A bikini picture where you do not look amazing and your super white that’s a whole other!
This feel super vulnerable and I don’t like it!
So tomorrow is picture day.
My face doesn’t have to show.
It’s a closed group. It won’t be out there to everyone.
And now my goals are written down. I have a coach to keep me in check, I have an accountability group to count on. I have a meal plan I have a workout routine and I have a buddy that meets me every morning at the gym.
This week I found there’s a pretty big difference between me focusing on one goal for 2017 and making that goal. It’s an actual reality with sticking points to make me stick to it.
My inspiration is much due to my workout partner Kristina and her every morning availability and text, to make sure I’m out of bed.
Accountability group will keep me accountable and because I am now paying for a coach I have a reason to stick with it I don’t want to waste any of my hard-earned money!

Fettuccini in Cream Sauce – 30 Minute Meal
We all need a go-to sauce we can put together in a pinch, right? This is my go-to and Cream Sauce is such a family favorite!
It’s easy to put together, only uses a few ingredients (you’ll probably have all of them on hand) and takes less than 30 minutes from start to finish.
Gotta love that right? 😀
To get started first put your water onto boil. Next melt the butter and lightly sauté the shallots for 4-5 minutes. Add the garlic and sauté until it becomes fragrant then the flour goes in. You will cook that for a minute or two. This will remove the flour taste. Add wine and stir until the lumps are removed. The sauce will be very thick. This is easy – super fabulous and such a popular meal in our home. Want to make it fancy? Just sprinkle it with chopped parsley before serving. Delish!
One of the keys to a great Creamy Sauce is mixing everything well. When the pasta is done, add it directly to the sauce. Take it right from the water into the sauce pan. Mix it together really well. If you think it’s mixed together enough – mix it a few more times. This will make a huge difference in the end.
If the sauce is too thick, add a ladle of pasta water. That will help loosen up the sauce!
What I really enjoy about this meal is that it’s fancy enough for a crowd but easy enough for a weeknight meal. Add a great salad and some crunchy garlic bread and you have a perfect meal! For the complete recipe for Fettuccini with Cream Sauce please click here.
